What's a "Fool" Anyway?

A centuries-old English classic, fools are made by folding puréed or mashed fresh fruit into whipped cream. Try our April Fool below & click through for other great forgotten classics.

April Rhubarb Fool

Ingredients:
¾ lb rhubarb, cut into
½-inch slices
¾ cup sugar
Juice of ½ lemon
1 tsp vanilla extract
2 cups Greek yogurt

Directions:
1. Add rhubarb, sugar, and lemon juice to heavy saucepan. Cook over medium; stir until sugar melts. Cover; cook 4 more minutes. Remove lid, turn up heat, and boil 8 minutes or until thick, stirring occasionally. Add vanilla. Refrigerate at least 30 minutes.

2. To serve, layer yogurt and rhubarb in parfait dishes.

Serving 4. Per serving: 320 calories, 46g carbs, 8g protein, 12g fat, 20mg cholesterol, 35mg sodium, 2g fiber. Cost: $1.49/serving
