Green Pea Pesto Pizza

This pizza conveniently cooks well on a cookie sheet, no pizza stone needed


Ingredients:

1 ball prepared pizza dough
all-purpose flour for rolling
8 oz frozen peas, thawed
1 large clove garlic
¼ cup toasted walnuts
¼ to 1/3 cup olive oil
1/3 cup grated Parmesan
½ tsp salt
3 oz shredded mozzarella 
18 grape tomatoes, halved

Directions:
1. Preheat oven to 500ºF. Place rack on lowest shelf. Roll pizza dough on a floured surface to create a 12” to 14” round. Place on floured cookie sheet. Cover with a cloth until ready to cook.

In a blender, combine peas, garlic, and walnuts; process to a chunky purée. Slowly add olive oil through the feed tube. Mix in Parmesan and salt. Spread pesto over pizza round. Top with mozzarella and tomato halves. Cook until crust is golden brown and cheese is bubbly, 10 to 15 minutes.

Serves 4. Per serving: 560 calories, 56g carbs, 19g protein, 31g fat, 20mg cholesterol, 1190mg sodium, 5g fiber
