Mango and Cuke Salad
Letting the salad chill before serving allows the flavors to really meld together.
3 mangoes, peeled and diced into 1-inch pieces (about 3 cups)
1 seedless cucumber, unpeeled and sliced very thin
1 small red onion, cut in half and
then into very thin slices
1 Tbsp finely chopped serrano chile pepper (optional)
¼ cup chopped fresh cilantro
2 Tbsp lemon juice
2 tsp lemon-flavored olive oil
½ tsp salt
½ tsp black pepper
1. In a serving bowl, combine all ingredients.
2. Chill at least 30 minutes.
Serves 6. Per serving: 150 cal, 28g carbs, 2g protein, 5g fat, 0mg chol, 50mg sodium, 3g fiber.
