Salt-Free Cajun Spice Blend
New Orleans is famous for its fattier fare, but once in a while we Louisianians eat something simple like beans and rice. Of course, back home it's often made with some kind of pork fat, but believe me it tastes just as terrific without it. Use this spice blend in my NOLA Red Beans & Rice dish, or use it as a seasoning on chicken.
ingredients:
8 tsp paprika
4 tsp granulated garlic
4 tsp granulated onion
4 tsp ground black pepper
2 tsp ground white pepper
1 to 2 tsp cayenne
2 tsp dried oregano, rubbed
2 tsp dried basil, rubbed
2 tsp dried thyme, rubbed
1/4 tsp celery seed
directions:

Combine all ingredients well and place in an airtight container.
