Meatballs are fantastic for a hearty weeknight supper because they're versatile and filling--and you can make them ahead of time
ingredients:
1 ½ lb ground beef
½ lb ground pork
¼ cup grated Parmesan
¼ cup unflavored dry bread crumbs
3 Tbsp chopped fresh parsley
1 egg, beaten
2 tsp minced garlic
2 Tbsp olive oil
1 tsp salt
¼ tsp pepper
1 (28-oz) can tomatoes, drained
1 (28-oz) can tomato puree
1 tsp dried basil
¼ tsp crushed red pepper
½ tsp salt
1 lb spaghetti

1. In a medium mixing bowl, combine the beef, pork, Parmesan, bread crumbs, parsley, egg, garlic, olive oil, salt and pepper. Using your hands, form into 2 dozen balls. Wash hands.

2. In a large slow cooker, combine canned tomatoes and tomato puree, basil, red pepper, and salt. Add the meatballs. Cover; cook on Low for 6 hours.

3. Cook the spaghetti until al dente. Divide spaghetti among 8 plates. Top each with sauce and meatballs. Add extra Parmesan, if desired.
