Mashed potatoes are a staple at every thanksgiving meal. This is a great basic recipe.
ingredients: Add all to shopping list
4 lbs russet potatoes, peeled & quartered
½ cup (1 stick) salted butter
2 cups low-fat buttermilk
Salt & pepper
At a glance:
In a pot, cover potatoes with cold, salted water. Bring to a boil, reduce heat; cook 20 minutes or until tender; drain. Warm butter, buttermilk and 1 tsp each salt and pepper in a small pot. Mash potatoes. Add butter mixture; mix until smooth. Serve immediately. If making ahead, allow to cool, cover with foil; refrigerate.
