Grilled Pork Tostadas

Crispy tortillas are topped with thin strips of spicy pork tenderloin.
ingredients: Add all to shopping list
1/4 cup olive oil
1 tsp salt
2 tsp ground cumin
1/2 tsp cayenne pepper
1 1/2 lb boneless pork tenderloin
2 each green and red bell peppers, cut into large strips
1 purple onion, halved and cut into 1/2-inch-thick slices
8 corn tortillas
1 1/2 cups grated Mexican-blend cheese
Lettuce, salsa, chopped cilantro, and guacamole for garnish
directions:

1. Preheat grill to medium.

2. Combine oil, salt, cumin, and cayenne. Brush on pork and vegetables.

3. Grill pork, covered, for 15 to 20 minutes (150°F for medium-rare). Slice into thin strips.

4. Grill vegetables, covered, for about 10 minutes, turning often.

5. Grill tortillas for 30 seconds or until crisp. Divide pork and vegetables among tortillas and sprinkle with cheese.

Place tortillas on a grill rack, cheese side up, and grill for 1 minute or until cheese melts. Serve with lettuce, salsa, cilantro, and guacamole.
