Classic Vinaigrette

Classic Vinaigrette
Dash Classics: Recipes for America’s Favorite FoodsThis basic vinaigrette is the perfect recipe to experiment with. You may substitute any vinegar, champagne, or lemon juice for the white wine vinegar. You may also add minced shallots or fresh herbs.
ingredients:
2 tablespoons Dijon mustard
1/4 cup white-wine vinegar (you may also sub balsamic, red wine, or apple cider vinegar)
Salt and pepper, to taste
6 tablespoons extra-virgin olive oil
directions:

Whisk the mustard, vinegar, salt and pepper together in a small bowl. Whisking constantly, slowly drizzle in the oil and continue whisking until slightly thickened. Refrigerate until ready to use.

KITCHEN COUNTER:

Makes about 3/4 Cup
