
1. Preheat oven to 350°F.
2. Smear a 9 x 5–inch loaf pan with vegetable oil.
3. In a large bowl combine all ingredients except BBQ sauce. Mix well.
4. Put mixture in loaf pan. Top with BBQ sauce; bake for 1 hour uncovered.
5. Remove from oven; let cool for 15 minutes. Cut into ½-inch slices.
Serves 6. Per serving: 290 calories, 19g carbs, 25g protein, 12g fat, 550mg sodium, 125mg cholesterol, 3g fiber
