This hearty dinner has just the right amount of kick.
ingredients: Add all to shopping list
1 Tbsp canola oil
1 tsp minced garlic
3 sliced scallions
2 tsp cumin or to taste
1/2 tsp chili powder or to taste
2 (15-oz) cans black beans, drained and rinsed
1 cup beef broth
3–4 Tbsp tomato paste
1 1/2–2 cups pot roast or other cooked beef, cut into bite-size pieces
4 Tbsp sour cream
1 lime, in wedges
2 Tbsp chopped fresh cilantro
At a glance:
1. In a large skillet, heat oil for 30 seconds. Add garlic and scallions and sauté for 2 minutes. Add cumin, chili powder, beans, broth, and tomato paste. Cook on low for 5 minutes or until hot.
2. Stir in meat. Simmer about 5 minutes.
3. Serve garnished with sour cream, lime wedges, radishes, and cilantro.
