This is a 3-in-1 meal. Make a double batch of Chicken Fajitas so you'll have leftovers to make this dish and Chicken Fajita Quesadillas
ingredients:
2 cups chicken fajitas, chopped into bite size pieces (see link above for recipe)
1 cup pinto beans (or black beans), cooked
1 cup Mexican cheese blend, shredded
2 cups brown rice, cooked

1. Reheat chopped fajitas, if using leftovers.

2. Place the first 3 ingredients in a bowl; stir to combine.
