Sadly, despite numerous requests from enthusiastic kids, blue isn't a color that exists in nature, and that's the only kind of dye I generally use in my pops. However, most kids seem to think the dark purple color of these pops is a pretty nice compromise. Color aside, the antioxidants from the blueberries can't be beat, and the flavor is just perfect when you get ripe berries at the height of the season.

1 1/2 cups blueberries
1/2 cup fresh-squeezed lemon juice
Zest of 1 Lemon
1/2 cup sugar
3 1/2 cups water

1. In a blender, add all the ingredients and blend on high until the blueberries are fully pulverized. Let the mixture rest until any froth has dissapated, or remove the froth by spooning it off.
2. Pour the mixture into molds, insert handles, and place in the freezer. If using sticks, insert them after 30 minutes or when the mixture is firm enough for them to stand upright. Freeze until solid, 4 to 5 hours minimum.
