I can’t seem to beat this craving I have for slow-roasted flavor.
I am sure it comes from an amazing childhood spent watching big Italian family dinners being prepared. The scent of tomatoes cooking for hours, hand-grated cheese, and handmade ravioli would carry you into the kitchen where you would find my mom and dad cooking together. Amazing memories full of love, singing and laughter dance through my head.
Today, as a busy mom with an active three-year old, I don’t spend hours in the kitchen creating one meal. Munchkin and I spend 30 minutes together creating an incredible dish while we sing and dance around the kitchen. 30 minutes is the perfect amount of time to make an impressive dinner and work in a few dance numbers, too.
But how do I create those deep flavors I long for? Sun-dried tomatoes and fire-roasted diced tomatoes are a combination that was made for my kitchen! They both impart a deep tomato flavor that tastes like you spent all day in the kitchen. It's the perfect cheat! Shhh, I won’t tell.
Sun-dried Tomato Bruschetta Chicken boasts a fabulous deep tomato flavor, combined with nutty Parmesan and ooey-gooey mozzarella cheese. It's wildly delicious and perfect served on a bed of rosemary linguine.
This entire dish, including your own dance number or two, goes from prep to plate in just 30 minutes.
