Macaroni and cheese is an easy choice for my picky 3 year old daughter. Pasta and cheese are always a winning combination, but I try to keep things as homemade and healthy as possible. If I ask Munchkin what she wants to eat, usually I will hear “peanut butter and jelly” or “pasta”; which is enunciated “pas-tahhhh”. Well, being Italian (and a mommy), the latter makes me grin.
I am always looking for scrumptious ways to change up the old standard favorites in our house. For this incredible mac and cheese I used inspiration from my most loved southwestern flavors to turn regular macaroni and cheese into a spectacular Southwestern Mac & Cheese in just 20 minutes.
Southwestern Mac and Cheese is truly a flavor explosion! Paprika and cumin give this dish an incredible smokiness, add a hint of spice from the chili powders and mix that together with the roasted green chiles to create a fabulous flavor combination.
The creamy and flavorful cheese sauce envelops the tender tubes of pasta and black beans to create a mouthwateringly delicious mac and cheese unlike anything you have eaten before. A simple garnish of fresh grape tomatoes and cilantro really brings this dinner together and it goes from prep to plate in just 20 minutes!
