Prepping Your Week

When you skid sideways into the kitchen at 5 or 6 o’clock on a weekday, wondering where the afternoon went, and how in the world you are going to get dinner on the table, reading the words “mince two cloves of garlic” at the beginning or a recipe can bring you to your knees.
,” you think, “I just don’t think I have it in me.
” This is the moment where even the most stalwart cook might think about throwing in the towel, reaching for the takeout menu, or that box of frozen whatever.
But not you! No, you planned ahead, you knew this moment was coming! That’s why you prepped your week! That why, during a lull in the action the previous Sunday afternoon, you pulled out the food processor, a cutting board and a knife, and created a little arsenal of ready-to-use ingredients so that when you finally got down to business, you would be ahead of the game.
Find half an hour at the beginning of the week, think about what recipes you will be making (or ingredients that you know you use frequently), and get them recipe-ready. Some ideas:
- Chop a few onions
- Peel and cut a bunch of big carrots into sticks, ready for easy chopping or snacking
- Chop up some fresh parsley
- Mince up some shallots, and some ginger
- Cut some broccoli or cauliflower into florets
- Cube up some zucchini, summer squash, or sweet potatoes
- Grate up those leftover pieces of cheese hanging out in the fridge
Pull all of your prepped ingredients into small containers, slide them into the fridge, and then all week long you’ll have them ready to go, and you’ll have a great jump start on making soups

, casseroles, stir fries, chili
, whatever inspires you.
