I’m a recovering Reese’s Peanut Butter Cup addict.
Since giving up dairy nearly 8 years ago, I’ve been on an endless mission to find a milk-free version of the salty-sweet, nuts-and-chocolate combo I crave. Reese’s Puffs (the cereal) comes close–it's dairy-free and surely delicious, but I could scarf down the whole box and not completely satisfy the craving. Pfftt! It's no match for the real thing. I could have just one peanut butter cup (yes, one
) and not crave another until… 20 minutes later. I clearly had an addiction. And I’m about to relapse with these little devils, a result of a recipe inspired by this one at Serious Eats
. They’re just way
too easy to make, and no oven is needed
In an effort to feel less guilty about my impending relapse, I added Shredded Wheat to the peanut butter base and the results were fantastic. These bars are deliciously dense with a bit of crunch and, thanks to seven large bars (not the spoon size) of Shredded Wheat, they’re full of fiber
. I topped them off with a layer of even more peanut butter, melted dark chocolate, and sprinkled with coarse salt. They’re completely dairy-free.
And I'm satisfied with just one (yes, one
)... every 30 minutes.
