Keep the feast going all weekend long. Add turkey to tacos, stir-fries, or pasta—or just build a Dagwood-size sandwich with the ideas below!
Construct a multidecker sandwich (like the one pictured above) on toasted whole wheat bread by layering cranberry sauce, gravy, leftover mashed sweet potatoes, stuffing, and turkey. Slice in half and serve warm.
Big Apple Special
Blend Dijon mustard with chopped, toasted pecans and a little minced fresh parsley. Spread on sourdough bread; add sliced turkey and peeled Granny Smith apple slices.
Stir chopped, toasted walnuts into apricot chutney. Spread on multigrain bread. Add thinly sliced turkey, sliced Brie, and arugula.
Toss diced leftover turkey with chopped celery, minced shallots, mayonnaise, and a bit of mango chutney. Wrap in a whole wheat flour tortilla, slice, and serve with sweet pickles.

Flavor mayonnaise with a pinch of chipotle chili powder. Spread on country-style white bread; add sliced turkey, sliced Monterey Jack, cooked bacon, and romaine.
Blue Bird on Rye
Mash crumbled blue cheese with a little softened butter until smooth. Spread on thick slices of rye bread, then layer on thinly sliced turkey, tomato, and arugula.
